These ports alone aren't actually working for me (nice iptables config though). Nevermind SSH (that ones nice and simple, I already have that set up) as you said I allowed all ICMP for ping. And thanks to this I can now ping my DNS server directly. However ping google.com does not work with this configuration. How dangerous is it to open my DNS server to the world? Any open port increases the attack surface, in theory. Your LAN could be at risk if a serious vulnerability is found in whatever DNS software you use. The biggest risk is that your DNS server becomes an unwitting participant in DNS amplification attacks.
